Super simple and healthy—this frittata with potato, mushrooms, and zucchini only requires a frying pan and a bowl!
Ingredients for 2 servings:

1 potato

1 zucchini

200 g (chestnut) mushrooms

1 onion

2 tbsp olive oil

1 clove of garlic

3 eggs

50 g grated 30+ cheese

Pinch of Italian herbs
Preparation:
Peel the potato and cut it into small cubes. Fry for about 10 minutes in a frying pan until golden brown. Meanwhile, finely chop the zucchini, mushrooms, onion, and garlic.
Place the potato cubes in a bowl and season with salt and pepper if desired. Then sauté the zucchini, mushrooms, onion, and garlic with Italian herbs. Add this mixture to the bowl with the potatoes.
Also add the eggs and cheese, mix well, and heat the second tablespoon of olive oil in the frying pan. Pour the mixture into the pan and let it cook on low heat for about 10 minutes. Flip the frittata using a plate and cook the other side for another 3–4 minutes.
Optionally, serve with a handful of fresh salad or toasted whole grain bread!
