Cod with Potatoes and Ham
Ingredients for 4 people:

1 kg potatoes

600 g cod fillet

2 small onions

2 slices serrano ham

500 ml chicken stock

80 g butter

1 clove garlic
-
2 sprigs thyme
-
1 bay leaf

50 g gruyère cheese

2 tablespoons olive oil
-
1 container fresh chives
Preparation:
Melt 50 g of butter in a large pan and slowly cook the onions and garlic on low heat for 20 minutes. Meanwhile, peel the potatoes, rinse, and slice them into ½ cm slices. Add the potato slices, thyme, and bay leaf to the pan with the onion-garlic mixture. Stir well and add enough chicken stock to just cover the potatoes. Remove the bay leaf.
Preheat the oven to 180°C (350°F).
Transfer the potato slices to an oven dish, sprinkle with cheese and half of the ham, and bake for about 10 minutes.
Meanwhile, season the cod with pepper, chives, and optionally a little salt. Heat the remaining butter in a non-stick pan and cook the fish for about 6 minutes, turning halfway through.
Top the cod with the rest of the ham and serve alongside the potato bake.
