Have you ever tried eating ‘Paleo’? Give this recipe a try! If you’ve followed the BenFit Paleo menus, you may have come across this one: chicken-peach salad with cauliflower purée.
Ingredients (1 serving):

450 grams cauliflower

20 grams unsalted cashew nuts

1 pinch of cinnamon

1 peach
-
4 tablespoons lemon juice
-
1 pinch of chives
-
1 pinch of salt

50 grams smoked chicken breast

1 tablespoon grated coconut
Preparation:

Bring the cauliflower florets to a boil in a pot of water and cook for about 10 minutes until tender.

Cut the chicken into cubes, remove the skin from the peach, and dice it as well.

In a bowl, mix the chicken and peach together with the lemon juice and fresh chives.

Add the coconut, nuts, cinnamon, and a pinch of salt to the cauliflower florets and blend with an immersion blender into a smooth purée.

Scoop the purée onto a plate and place the chicken salad on top.
