Ingredients for 2 servings:

150 g whole grain pasta

400 g sieved tomatoes (canned)

1 garlic clove

1 onion

1 zucchini

1 bell pepper

1 can of lentils

25 g Parmesan cheese

Preparation:
Chop the zucchini, onion, bell pepper, tomato, and garlic into small pieces. Heat some olive oil in a pot and sauté the garlic and onion. Then add the vegetables and lentils and cook for about 5 minutes. Next, add the pasta and 250 ml of boiling water. Stir well and let simmer for 15 minutes with the lid on, so the pasta can cook. Serve with grated Parmesan cheese.
Tip:
When you’re on vacation, you might not have all the ingredients or spices at hand. Get creative with whatever vegetables and herbs are available. You can easily add other vegetables like tomato, mushrooms, carrots, eggplant, or spinach.
