It’s that time of year again – time for “kruidnoten”! Normally, they’re a sugar bomb, but here’s a healthier version that you can whip up in no time.
Makes 10 portions of approx. 40 grams each
Ingredients

200 grams whole wheat flour

25 grams sugar

¼ teaspoon stevia drops

5 tablespoons margarine
-
4 tablespoons plant-based almond milk (or nut, coconut, soy or rice milk)

4 teaspoons speculaas spices

2 teaspoons cinnamon
-
4 drops vanilla extract

A small pinch of salt
Instructions

Preheat the oven to 175°C (350°F) and line a baking tray with parchment paper.

Melt the margarine until liquid.

Mix the flour, sugar, spices, cinnamon, and salt in a bowl.

Add the vanilla extract, stevia, and melted margarine.

Gradually add the milk, one spoon at a time, until you have a sticky dough.

Knead the dough thoroughly and form small balls. Flatten them slightly on the baking tray to resemble kruidnoten.

Bake for 15–20 minutes until light brown.

Let the cookies cool down to become nice and crispy.
Variation Tip:
Want more variety? Try healthy chocolate kruidnoten!
Mix 25 ml almond milk with a teaspoon of coconut oil and warm it in a pan. Stir in 2 tablespoons raw cocoa powder until smooth. Dip the cooled kruidnoten into the chocolate and place them on a plate to harden. Delicious!
