Fish is packed with valuable nutrients. Be sure to choose fish with sustainability labels like MSC or ASC to minimize environmental impact. Try including fish on your menu once a week to enjoy the health benefits—for example, this plaice fillet with broccoli mash!
Ingredients for 2 people
-
450 g floury potatoes
-
500 g broccoli
-
1 tbsp olive oil
-
200 g plaice fillet (2 fillets)
-
1 tsp tarragon
Peel and cut the potatoes. Boil for 20 minutes. Cut the broccoli into florets and add it to the potatoes for the final 10 minutes. Drain, leaving a bit of the cooking water. Mash the potatoes and broccoli into a purée and season with salt and pepper if desired.
Heat the oil in a frying pan and cook the plaice fillets with pepper, salt, and tarragon—about 5 minutes per side. Serve the fillets with the broccoli mash.
Tip: Instead of tarragon, fish also goes well with parsley, dill, thyme, chervil, or oregano.
