Craving a fresh salad in this summer weather? But still want a satisfying, filling meal? Try this sweet potato salad with goat cheese!

1 sweet potato

100 grams chickpeas

50 grams arugula

50 grams lamb’s lettuce

50 grams goat cheese

50 grams pecans

1 tablespoon olive oil

Cayenne pepper or paprika powder to taste
Preparation
Preheat the oven to 180°C (356°F). Cut the sweet potato (optionally with skin) into cubes of about 1 cm. Rinse the chickpeas. Spread the sweet potato and chickpeas on a baking tray, drizzle with olive oil and optionally add a pinch of cayenne pepper. Roast for 20 minutes.
Meanwhile, mix the salad greens, chop the nuts, and crumble the goat cheese. Once the sweet potato and chickpeas are ready, add everything to the salad!
