This delicious salad makes for a summery, fruity lunch — perfect! It features mango and tender chicken breast. A great way to get through the summer!
Ingredients (serves 4):

5 tablespoons low-fat yogurt

1.5 tablespoons lime juice

1.5 tablespoons mango chutney

1 teaspoon honey

¼ teaspoon ground cumin, coriander, and paprika

2 tablespoons olive oil

400 g chicken breast, cut into strips

1 teaspoon grated fresh ginger

1 clove garlic, finely chopped

2 mangoes, sliced
-
½ red bell pepper, chopped
-
3 spring onions, finely chopped

2 small heads of lettuce, shredded
Preparation:
In a small bowl, mix the yogurt, lime juice, mango chutney, honey, cumin, coriander, and paprika.
In a medium frying pan, heat the olive oil over medium heat. Add the chicken, ginger, and garlic and cook for 7–10 minutes, stirring occasionally, until the chicken is cooked through.
Stir in the mango, red pepper, and spring onions. Cook for another 5 minutes until the pepper is soft and the mango is warmed through.
Stir in the yogurt mixture, spoon everything over the lettuce, and serve.
Tip:
Serve with a slice of toasted baguette.
